- Lo primero que hago siempre que quiero hacer una paella es preparar el sofrito para el majado. Para ello, se sofríen las ñoras y se sacan, después los ajos y finalmente el tomate con piel, cortado en 4 trozos.
- Con todos los ingredientes y un poco de sal hacemos un majado en el mortero (también se pueden duplicar los ingredientes y congelar la mitad para tenerla para otra paella).
- Limpiamos los mejillones y los cocemos al vapor hasta que se abran. Les quitamos las conchas y colamos el caldo que reservamos para la paella.
- En la paellera sofreímos en el aceite los ajos tiernos y el pimiento cortado a trozos.
- Cuando estén hechos, añadimos el calamar cortado a trocitos y lo sofreímos unos minutos.
- Después echamos el majado, el agua caliente (descontamos en la medida el agua que han soltado los mejillones), el vino, la cúrcuma y, cuando empiece a hervir, echamos también el arroz.
- Cuando comience a hervir otra vez contaremos 8 minutos y pondremos entonces las almejas, gambas, mejillones y cualquier otro marisco que tangamos y lo tendremos cociendo otros 5 minutos, rectificando de sal.
- Lo apartamos y lo dejamos reposar 5 minutos.
