  5. Aliñamos las verduras generosamente con el pimentón, la sal, la pimienta y el aceite y dejamos reposar. Las verduras deberían tomar un tono anaranjado y brillante donde no escasee el pimentón, la pimienta, la sal y el aceite.
  6. En un plato dejaremos el solomillo de cerdo cortado en trozo pequeños y lo condimentaremos con sal, pimienta y aceite. Reservamos.

(Thermomix: Añadimos el agua - 2 minutos temperatura 37º velocidad 2 -, añadimos el aceite y mezclamos - 10 segundos velocidad 5 -, finalmente añadiremos la harina - 30 segundos velocidad 6 y luego 3 minutos velocidad espiga -.
  8. La masa resulatante la dividimos en dos partes iguales. A mí me gusta ser exacto y lo peso.
  9. Estirar la masa sobre un papel de hornear previamente espolvoreado de harina y darle forma ovalada.
  10. Colocamos una generosa capa de verduras en el centro dejando que sobre pasta a los lados. Añadimos el solomillo y algunas pasas. Y cubrimos con otra capa de verdura.
  11. Procederemos a tapar a espinagada, de manera que quede cerrada como un sobre.
  12. Repetiremos pasos 9, 10, y 11, para la segunda espinagada.
  13. En el horno precalentado a 200º, se hornearán las 2 durante 60 minutos.
