- Añade el vino y remueve hasta que el alcohol se evapore. (El vino es para darle esa acidez tan característica, además de sabor). Intenta hacerte con un buen vino blanco, tipo Chardonnay o Sauvignon.
Si no quieres usar alcohol, usa unas gotas de zumo de limón. - Es hora de incorporar el caldo, pero no de golpe! Vierte hasta ver que el arroz se ha cubierto un poco, no dejes de remover hasta que se haya absorbido. Vuelve a verter caldo y sigue el mismo proceso hasta que el arroz haya roto, si lo probamos debe estar blandito. Si no es así y te has quedado sin caldo, añade agua y sigue el mismo proceso. Te llevará de 20 a 25 min.
- Si te ha quedado blandito y cremoso, es hora de añadirle el parmesano rallado. Remueve 1 min hasta que se haya deshecho. Para el emplatado, dispón en el centro del plato y espolvorea un poco de parmesano. ¡Y LISTO!
