- Ahora cortamos el atún en taquitos y en un bol lo mezclamos con la mezcla que hemos hecho antes. Y lo metemos en la nevera como media hora para que macere el atún.
- Ahora hacemos el brocomole, que es como una especie de guacamole pero con brócoli. Para ello cocemos el tronco de brócoli que tenía (podría hacerse con otras partes pero el tronco tiene mucho sabor). Una vez cocido lo dejamos enfriar.
Mientras se enfría cogemos los 100 gr de aguacate y lo cortamos y aplastamos en un bol. Después cortamos los tomates cherry en trocitos pequeños y la media cebolleta picada muy fina y lo añadimos al aguacate. - Una vez frío el brócoli se añade a la mezcla y se aplasta para que quede una mezcla más o menos homogénea en textura (si lo veis necesario podéis pasarlo por la batidora) y se añade el zumo de medio limón o un limón en función de la acidez que nos guste. Podríamos añadir algo de la mezcla de macerado del atún para darle más sabor.
- Para emplatar, ponemos el molde y una primera capa con el brocomole. Después ponemos la manzana cortada en trocitos pequeños y después el atún y el resto del aguacate cortado en trocitos también.
- Finalmente se añade un chorrito de aceite y a disfrutar!
