  1. Primero hacemos un fumet de pescado con la cabeza y los huesos del rape (en la pescadería pedí que.e separase los lomos del rape y los cortasen en dados), la cabeza de las gambas, media cebolla, la zanahoria y dos hoja de laurel.

  4. En una olla ponemos un chorro de aceite, cuando está algo caliente echamos los ajos y cuando estén dorados (sin quemarse) añadimos la cebolla. Removemos todo y dejamos que se cocine bien.
  5. Añadimos las patatas y las marcamos con el fuego fuerte. Luego, añadimos una parte del fumet, que previamente hemos colado para que no se cuelen impurezas.
  6. Dejamos que las patatas se cuezan a fuego medio, dándole vueltas de vez en cuando.
  7. Cuando vemos que están casi cocidas echamos los dados de rape. Bajamos el fuego y tapamos.
  8. Después de 5 minutos añadimos las almejas (que habíamos dejado la noche anterior en remojo, cambiando el agua de vez en cuando), las gambas peladas y el perejil bien cortadito. Tapamos y dejamos 5 minutos aproximadamente (hasta que se abran las almejas).
  9. Una vez se han abierto las almejas apagamos el fuego y dejamos reposar unos minutos. Y a comer!
